Devalkeneer sources Aveyron lamb, Brittany abalone, and honey from his own beehives. Seabass arrives with bay leaf, green asparagus, and black truffle. Hollandaise is finished last-minute. Nothing is overworked.

The kitchen is now with the fourth generation: Laurence, Lionel, and their son Loic Rigolet. They keep the classics and add modern touches to the tasting menu. The Riwyne cellar space offers a contemporary private dining option.
